This unique artisan cheese is hand rubbed with espresso and lavender.  The mixture is diluted with oil and hand-rubbed on a one-day old cheese which is then left to mature for over eight months.  The result produces subtle notes of butterscotch and caramel which make their way right to the centre of the cheese.
